I was craving that thick, pillowy texture with a perfect cinnamon sugar coating. After testing this three ways, I discovered that chilling the dough and using cream of tartar made all the difference. Then I cracked the code with a lower temperature and quick cook time. Now they come out soft, chewy, and perfectly coated every time.

Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cream of tartar
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • Cinnamon Sugar Coating:
  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon

Instructions
 

  • In a bowl, whisk together flour, baking soda, salt, and cream of tartar.
  • In another bowl, cream butter and sugar until light and smooth.
  • Add egg and vanilla extract, mixing until combined.
  • Gradually mix dry ingredients into wet ingredients until dough forms.
  • Chill dough for 10 minutes to prevent spreading.
  • In a small bowl, mix cinnamon and sugar.
  • Scoop dough into small balls.
  • Roll each ball in cinnamon sugar coating.
  • Preheat air fryer to 320°F (160°C).
  • Line basket with parchment paper.
  • Place dough balls in basket with space between them.
  • Lightly flatten each ball.
  • Air fry for 6–8 minutes until edges are set and tops are slightly crackled.
  • Let cookies cool for 3 minutes before removing.

Notes

  • Air fryer models vary, so check cookies at 6 minutes.
  • Do not overcrowd; bake in batches for even cooking.
  • Chilling dough helps maintain thickness and soft centers.
  • Store in an airtight container for up to 4 days.
  • Reheat at 300°F (149°C) for 2 minutes to refresh texture.
