Air fryer shrimp tacos were one of those meals I thought would be simple, until my first batch came out rubbery and overcooked. I wanted that light crisp outside with juicy shrimp inside, but pan cooking wasn’t cutting it. After testing this three ways, I discovered that high heat and a short cook time made all the difference. The first few attempts were close, but adjusting the seasoning and spacing finally nailed the texture. I finally landed on perfectly seasoned shrimp with a slight crisp that works beautifully in tacos.

Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 small tortillas
  • 1 cup shredded cabbage
  • ½ cup diced tomatoes
  • ¼ cup sour cream or crema
  • 1 tablespoon lime juice

Instructions
 

  • Preheat the air fryer to 400°F (200°C) for 3 minutes.
  • Pat the shrimp dry with paper towels.
  • Place shrimp in a mixing bowl.
  • Add olive oil to the shrimp.
  • Sprinkle chili powder over the shrimp.
  • Add paprika, garlic powder, salt, and black pepper.
  • Toss until shrimp are evenly coated.
  • Place shrimp in the air fryer basket in a single layer.
  • Cook at 400°F (200°C) for 3–4 minutes.
  • Flip the shrimp using tongs.
  • Cook for another 3–4 minutes.
  • Look for pink, opaque shrimp with lightly crisp edges.
  • Ensure internal temperature reaches 145°F (63°C).
  • Warm tortillas slightly before assembling.
  • Fill tortillas with shrimp, cabbage, and tomatoes.
  • Drizzle with sour cream and lime juice before serving.

  • Do not overcrowd the air fryer to keep shrimp crisp.
  • Shrimp cook quickly—avoid overcooking to prevent rubbery texture.
  • Air fryer models vary; check at 6 minutes.
  • Store leftovers in the refrigerator for up to 2 days.
