Air fryer shrimp egg rolls were one of those recipes I assumed would be tricky, until my first batch turned out unevenly crisp with a slightly soggy seam. I wanted that classic crunch without deep frying. After testing this three ways, I discovered that sealing tightly and lightly spraying the wrappers made all the difference. Then I cracked the code by flipping halfway through cooking. Now they come out evenly golden, crisp on every side, and packed with juicy shrimp filling.
