Ingredients
  

  • 12 egg roll wrappers
  • 8 oz raw shrimp peeled, deveined, chopped
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 2 green onions chopped

  • 1 tsp grated ginger
  • 2 tbsp soy sauce
  • 1 tsp sesame oil

Instructions
 

  • Chop shrimp into small pieces until finely minced.
  • In a bowl, combine shrimp, cabbage, carrots, green onions, garlic, ginger, soy sauce, sesame oil, pepper, and cornstarch.
  • Mix until well combined and slightly sticky.
  • Lay one egg roll wrapper on a flat surface with a corner facing you.
  • Spoon 2–3 tablespoons of filling near the bottom corner.
  • Fold the bottom corner over the filling.
  • Fold in the sides tightly.
  • Roll upward to form a sealed log.
  • Brush the top corner with beaten egg and seal completely.
  • Preheat air fryer to 375°F (190°C).
  • Lightly spray egg rolls with oil on all sides.
  • Place egg rolls in a single layer in the basket.
  • Air fry for 6 minutes until lightly golden.
  • Flip egg rolls carefully.
  • Cook for another 5–6 minutes until evenly golden and crispy.
  • Ensure shrimp filling reaches 145°F (63°C) internally before serving.

  • Air fryer models vary, so check early for doneness.
  • Avoid overcrowding to ensure even crisping—cook in batches if needed.
  • Keep wrappers covered while assembling to prevent drying out.
