Air fryer scotch eggs were one of those recipes I wanted to love but kept getting wrong. The first time I tried them, the sausage cooked unevenly and the coating never crisped properly. After testing this three ways, I discovered that lightly pre-cooking the eggs and using a thin sausage layer made the biggest difference. The first few attempts were close, but adjusting the air fryer temperature finally solved the soggy coating problem. I finally landed on crisp, golden sausage outside with perfectly tender eggs in the center.

Notes
- Air fryer models vary. If the coating browns too quickly, reduce temperature to 370°F (188°C).
- Avoid overcrowding the basket so the coating crisps evenly.
- Store leftovers in the refrigerator for up to 3 days.
- Reheat in the air fryer at 350°F (175°C) for 4–5 minutes.
- For a spicier version, add cayenne pepper or spicy sausage.
