Air fryer scotch eggs were one of those recipes I wanted to love but kept getting wrong. The first time I tried them, the sausage cooked unevenly and the coating never crisped properly. Ingredients
  

  • 4 large eggs
  • ½ pound ground breakfast sausage
  • ¼ cup breadcrumbs
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • 1 egg for egg wash
  • ½ cup panko breadcrumbs
  • Cooking spray

Instructions
 

  • Bring a saucepan of water to a gentle boil.
  • Carefully add the eggs to the water.
  • Boil the eggs for 6 minutes for slightly soft centers.
  • Transfer the eggs immediately to an ice bath.
  • Cool for 5 minutes and peel the shells.
  • Place sausage in a mixing bowl.
  • Add Dijon mustard, garlic powder, onion powder, salt, and pepper.
  • Mix until evenly combined.
  • Divide the sausage mixture into four portions.
  • Flatten one portion into a thin oval patty.
  • Wrap the sausage evenly around one peeled egg.
  • Seal the edges and smooth the surface.
  • Beat the remaining egg in a small bowl.
  • Dip each sausage-wrapped egg into egg wash.
  • Roll in panko breadcrumbs until fully coated.
  • Preheat the air fryer to 380°F (193°C).
  • Lightly spray the eggs with cooking spray.
  • Place eggs in the air fryer basket in a single layer.
  • Cook at 380°F (193°C) for 16–18 minutes.
  • Look for deep golden-brown coating and fully cooked sausage.
  • Ensure sausage reaches an internal temperature of 165°F (74°C).
  • Rest for 3 minutes before slicing and serving.

Notes

  • Air fryer models vary. If the coating browns too quickly, reduce temperature to 370°F (188°C).
  • Avoid overcrowding the basket so the coating crisps evenly.
  • Store leftovers in the refrigerator for up to 3 days.
  • Reheat in the air fryer at 350°F (175°C) for 4–5 minutes.
  • For a spicier version, add cayenne pepper or spicy sausage.
