Air Fryer Crab Stuffed Mushrooms – Crispy & Juicy in 10 Minutes

Air fryer crab stuffed mushrooms were one of those appetizers I thought would be effortless, until my first batch turned watery and flat. I wanted that rich, savory filling with a golden top, not soggy mushrooms. After testing this three ways, I discovered that pre-drying the caps and using the right temperature made all the difference. Then I cracked the code with a quick high-heat finish that locks in moisture while crisping the top. Now they come out perfectly juicy with a lightly golden crust every time.

Equipment

  • Air fryer (5–6 quart recommended)
  • Mixing bowl
  • Spoon
  • Paper towels
  • Tongs

Ingredients

  • 12 large white or cremini mushrooms stems removed
  • 6 oz lump crab meat drained
  • 3 oz cream cheese softened
  • 2 tbsp mayonnaise
  • 2 tbsp grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 clove garlic minced
  • 1 tbsp chopped parsley
  • 1/2 tsp Old Bay seasoning
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  • Clean mushrooms and gently remove stems. Pat caps dry with paper towels to remove excess moisture.
  • Brush mushroom caps lightly with olive oil.
  • In a bowl, combine crab meat, cream cheese, mayonnaise, Parmesan, breadcrumbs, garlic, parsley, Old Bay, and pepper.
  • Mix until the filling is creamy but still slightly chunky.
  • Spoon the crab mixture into each mushroom cap, pressing lightly to fill.
  • Preheat air fryer to 370°F (188°C).
  • Arrange mushrooms in a single layer in the basket without overcrowding.
  • Air fry for 8 minutes until mushrooms are tender.
  • Increase temperature to 390°F (199°C) and cook for 2 more minutes until tops are golden brown.
  • Remove and let cool slightly before serving.

Notes

  • Air fryer models vary, so check at the 8-minute mark to avoid overcooking.
  • Do not overcrowd; cook in batches for even crisping.
  • Store leftovers in the refrigerator for up to 2 days.
  • Reheat at 350°F (177°C) for 3–4 minutes until warmed through.
  • For a lighter version, swap cream cheese with Greek yogurt.
  • Add a squeeze of lemon or extra Old Bay for a brighter flavor twist.
