Air fryer corned chicken bites came from one of those “why is this so dry?” kitchen moments. I wanted bold, seasoned bites with crispy edges, but my first batch turned tough and uneven. The first few attempts taught me that smaller, evenly cut pieces and a slightly higher temperature made all the difference. After testing this three ways, I discovered that a light oil coating helped the corned spices bloom instead of burn. I finally landed on juicy centers with crisp, golden edges that make these completely addictive.

Notes
- Air fryer models vary. If your air fryer runs hot, reduce temperature to 390°F (199°C) and monitor browning.
- Do not overcrowd the basket. Cook in batches for the crispiest results.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Reheat at 375°F (190°C) for 3–4 minutes until heated through and crisp again.
- For extra flavor, finish with a squeeze of lemon or serve with a mustard dipping sauce.
