Air Fryer Corned Chicken Bites – Crispy & Juicy in 15 Minutes

Air fryer corned chicken bites came from one of those “why is this so dry?” kitchen moments. I wanted bold, seasoned bites with crispy edges, but my first batch turned tough and uneven. The first few attempts taught me that smaller, evenly cut pieces and a slightly higher temperature made all the difference. After testing this three ways, I discovered that a light oil coating helped the corned spices bloom instead of burn. I finally landed on juicy centers with crisp, golden edges that make these completely addictive.

Equipment

  • 6-quart air fryer
  • Mixing bowl
  • Tongs
  • Meat thermometer

Ingredients

  • 1 ½ pounds boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon crushed coriander seeds
  • ¼ teaspoon mustard powder

Instructions

  • Preheat the air fryer to 400°F (200°C) for 3–5 minutes.
  • Pat the chicken cubes dry with paper towels.
  • Add the chicken to a mixing bowl.
  • Drizzle olive oil over the chicken.
  • Toss until evenly coated.
  • Combine salt, pepper, garlic powder, onion powder, paprika, thyme, oregano, coriander, and mustard powder in a small bowl.
  • Sprinkle the seasoning mixture over the chicken.
  • Toss until all pieces are evenly coated.
  • Arrange the chicken bites in a single layer in the air fryer basket.
  • Cook at 400°F (200°C) for 6–7 minutes.
  • Shake the basket gently to flip the pieces.
  • Continue cooking at 400°F (200°C) for another 6–8 minutes.
  • Check that the exterior is golden brown with lightly crisp edges.
  • Use a meat thermometer to confirm the internal temperature reaches 165°F (74°C).
  • Remove from the air fryer and rest for 3–5 minutes before serving.

Notes

  • Air fryer models vary. If your air fryer runs hot, reduce temperature to 390°F (199°C) and monitor browning.
  • Do not overcrowd the basket. Cook in batches for the crispiest results.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Reheat at 375°F (190°C) for 3–4 minutes until heated through and crisp again.
  • For extra flavor, finish with a squeeze of lemon or serve with a mustard dipping sauce.
