Air Fryer Chicken Shawarma – Juicy & Flavor-Packed in 15 Minutes

Air fryer chicken shawarma was my answer to craving those deeply spiced, juicy wraps without dealing with a rotisserie setup at home. My first attempt turned out dry and lacked that signature flavor punch. After testing this three ways, I discovered that using chicken thighs and letting the spices sit longer made a huge difference. Then I cracked the code by cooking at a slightly higher temperature for caramelized edges, and now it comes out tender, bold, and incredibly satisfying every time.

Equipment

  • Air Fryer (6-quart recommended)
  • Mixing bowl
  • Tongs
  • Knife

Ingredients

  • 1 ½ pounds boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon garlic powder
  • 1 teaspoon ground coriander
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  • In a bowl, combine olive oil, paprika, cumin, turmeric, garlic powder, coriander, cinnamon, salt, pepper, and lemon juice.
  • Add chicken thighs and coat evenly with the marinade.
  • Let the chicken marinate for at least 15 minutes (or up to 8 hours for deeper flavor).
  • Preheat the air fryer to 390°F (199°C) for 3 minutes.
  • Place the chicken in a single layer in the air fryer basket.
  • Cook at 390°F (199°C) for 8 minutes.
  • Flip the chicken using tongs.
  • Cook for another 5–7 minutes until edges are caramelized and slightly crisp.
  • Check that the internal temperature reaches 165°F (74°C).
  • Remove and rest for 3 minutes.
  • Slice the chicken into strips before serving.

Notes

Air fryer models vary, so check for doneness around 12 minutes to prevent overcooking. Avoid overcrowding the basket, cook in batches if needed for proper browning. Store leftovers in the refrigerator for up to 4 days. Reheat at 350°F (175°C) for 3–5 minutes. You can swap spices to adjust heat or add yogurt marinade for extra tenderness. Serve in wraps, rice bowls, or salads.
