Air Fryer Chicken Satay – Juicy & Charred in 12 Minutes

Air fryer chicken satay became my go-to after struggling to get that grilled flavor indoors without drying out the meat. My first batches were either pale or overcooked, and nothing like the street-style skewers I wanted. After testing this three ways, I discovered that marinating longer and cooking at a slightly higher temperature gave me those lightly charred edges without losing juiciness. Then I cracked the code by spacing the skewers properly, and now they come out tender, flavorful, and perfectly cooked every time.

Equipment

  • Air Fryer (6-quart recommended)
  • Wooden skewers (soaked in water for 20 minutes)
  • Mixing bowl
  • Tongs

Ingredients

  • 1 ½ pounds chicken thighs cut into strips
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 2 teaspoons curry powder
  • 1 teaspoon garlic powder
  • 1 tablespoon vegetable oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Soak wooden skewers in water for at least 20 minutes to prevent burning.
  • In a bowl, combine soy sauce, lime juice, brown sugar, curry powder, garlic powder, oil, salt, and pepper.
  • Add chicken strips to the marinade and mix until fully coated.
  • Let the chicken marinate for at least 15 minutes (or up to 4 hours for deeper flavor).
  • Thread the marinated chicken onto skewers evenly.
  • Preheat the air fryer to 380°F (193°C) for 3 minutes.
  • Place skewers in a single layer in the air fryer basket.
  • Cook at 380°F (193°C) for 6 minutes.
  • Flip the skewers using tongs.
  • Cook for another 4–6 minutes until lightly charred and fully cooked.
  • Check that the internal temperature reaches 165°F (74°C).
  • Remove and rest for 2 minutes before serving.

Notes

Air fryer models vary, so start checking at the 10-minute mark to avoid overcooking. Do not overcrowd the basket, cook in batches for even browning. Store leftovers in the refrigerator for up to 3 days. Reheat at 350°F (175°C) for 3–4 minutes. You can swap chicken thighs for chicken breast, but reduce cook time slightly to prevent dryness. Serve with peanut sauce or cucumber salad for extra flavor.
