Ingredients
  

  • – 2 cups cooked chicken breast shredded
  • – 1 ½ cups shredded Mexican blend cheese
  • – 4 medium flour tortillas
  • – 1 tablespoon olive oil
  • – ½ teaspoon garlic powder
  • – ½ teaspoon chili powder
  • – ¼ teaspoon salt
  • – ¼ teaspoon black pepper

Instructions
 

  • Preheat the air fryer to 370°F (188°C) for 3 minutes.
  • In a bowl, mix shredded chicken with garlic powder, chili powder, salt, and pepper.
  • Lay one tortilla flat and sprinkle cheese evenly over half of it.
  • Add seasoned chicken on top of the cheese.
  • Sprinkle additional cheese over the chicken layer.
  • Fold the tortilla in half to form a quesadilla.
  • Lightly brush both sides of the tortilla with olive oil.
  • Place the quesadilla in the air fryer basket in a single layer.
  • Cook at 370°F (188°C) for 4 minutes.
  • Flip the quesadilla carefully using tongs.
  • Cook for another 3–4 minutes until golden brown and crispy.
  • Remove when the tortilla is crisp and the cheese is fully melted.
  • Let rest for 1 minute before slicing into wedges.

Notes

Air fryer models vary, so check at the 6-minute mark to prevent over-browning. Avoid overcrowding the basket to ensure even crisping—cook in batches if needed. Store leftovers in the fridge for up to 3 days. Reheat at 350°F (175°C) for 3–4 minutes until crispy again. You can swap chicken for steak or beans, and use low-carb tortillas if preferred.
