Air fryer chicken quesadillas were my fix after too many soggy skillet attempts that just wouldn’t crisp evenly. I wanted that golden crunch without babysitting a pan. The first few attempts came out dry or unevenly melted, but after testing this three ways, I discovered that a slightly lower temperature and flipping halfway made all the difference. Then I cracked the code with the perfect cheese-to-chicken ratio, and now they come out crispy outside, gooey inside, every single time.

Notes
Air fryer models vary, so check at the 6-minute mark to prevent over-browning. Avoid overcrowding the basket to ensure even crisping—cook in batches if needed. Store leftovers in the fridge for up to 3 days. Reheat at 350°F (175°C) for 3–4 minutes until crispy again. You can swap chicken for steak or beans, and use low-carb tortillas if preferred.
