Ingredients
  

  • 1 ½ pounds boneless skinless chicken thighs cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon sake or rice vinegar as substitute
  • 1 teaspoon grated ginger
  • 2 teaspoons garlic minced
  • 1 cup potato starch or cornstarch
  • Oil spray

Instructions
 

  • In a bowl, combine soy sauce, sake, ginger, and garlic.
  • Add chicken pieces and mix until fully coated.
  • Let marinate for at least 15 minutes (up to 2 hours for deeper flavor).
  • Preheat the air fryer to 390°F (199°C) for 3 minutes.
  • Coat each piece of chicken evenly in potato starch.
  • Shake off excess starch for a light coating.
  • Lightly spray coated chicken with oil.
  • Place chicken in a single layer in the air fryer basket.
  • Cook at 390°F (199°C) for 6 minutes.
  • Flip each piece using tongs.
  • Cook for another 4–6 minutes until golden and crispy.
  • Ensure internal temperature reaches 165°F (74°C).
  • Remove and rest for 2 minutes before serving.

Notes

Air fryer models vary, so check at the 9-minute mark to avoid overcooking. Avoid overcrowding—cook in batches for best crispiness. Store leftovers in the fridge for up to 3 days. Reheat at 375°F (190°C) for 3–4 minutes to restore crunch. Potato starch gives the best texture, but cornstarch works as a substitute. Serve with lemon wedges or Japanese mayo for extra flavor.
