Ingredients
- 1 ½ pounds boneless skinless chicken thighs cut into bite-sized pieces
- 2 tablespoons soy sauce
- 1 tablespoon sake or rice vinegar as substitute
- 1 teaspoon grated ginger
- 2 teaspoons garlic minced
- 1 cup potato starch or cornstarch
- Oil spray
Instructions
- In a bowl, combine soy sauce, sake, ginger, and garlic.
- Add chicken pieces and mix until fully coated.
- Let marinate for at least 15 minutes (up to 2 hours for deeper flavor).
- Preheat the air fryer to 390°F (199°C) for 3 minutes.
- Coat each piece of chicken evenly in potato starch.
- Shake off excess starch for a light coating.
- Lightly spray coated chicken with oil.
- Place chicken in a single layer in the air fryer basket.

- Flip each piece using tongs.
- Cook for another 4–6 minutes until golden and crispy.
- Ensure internal temperature reaches 165°F (74°C).
- Remove and rest for 2 minutes before serving.
Notes
Air fryer models vary, so check at the 9-minute mark to avoid overcooking. Avoid overcrowding—cook in batches for best crispiness. Store leftovers in the fridge for up to 3 days. Reheat at 375°F (190°C) for 3–4 minutes to restore crunch. Potato starch gives the best texture, but cornstarch works as a substitute. Serve with lemon wedges or Japanese mayo for extra flavor.
