Ingredients
- 2 cups cooked chicken shredded
- 1 cup enchilada sauce
- 1 ½ cups shredded cheddar or Mexican blend cheese
- 6 small flour tortillas
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- ½ teaspoon cumin
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat the air fryer to 360°F (182°C) for 3 minutes.
- In a bowl, mix shredded chicken with garlic powder, cumin, salt, and pepper.
- Lightly brush tortillas with olive oil.
- Warm tortillas slightly so they are flexible.
- Spoon chicken mixture into the center of each tortilla.

Air fryer models vary, so check at the 8-minute mark to avoid overcooking. Avoid overcrowding, use a dish that fits comfortably in your basket. Store leftovers in the fridge for up to 3 days. Reheat at 350°F (175°C) for 4–5 minutes. You can swap flour tortillas for corn tortillas or add beans, peppers, or onions for extra filling.
