Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 cup enchilada sauce
  • 1 ½ cups shredded cheddar or Mexican blend cheese
  • 6 small flour tortillas
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Preheat the air fryer to 360°F (182°C) for 3 minutes.
  • In a bowl, mix shredded chicken with garlic powder, cumin, salt, and pepper.
  • Lightly brush tortillas with olive oil.
  • Warm tortillas slightly so they are flexible.
  • Spoon chicken mixture into the center of each tortilla.
  • Add a small amount of cheese on top of the chicken.
  • Roll each tortilla tightly into an enchilada.
  • Place enchiladas seam-side down in an air fryer-safe dish.
  • Spoon enchilada sauce over the top evenly.
  • Sprinkle remaining cheese over the enchiladas.
  • Cook at 360°F (182°C) for 8–10 minutes.
  • Cook until cheese is melted and edges are lightly crispy.
  • Remove and let rest for 2 minutes before serving.

Notes

Air fryer models vary, so check at the 8-minute mark to avoid overcooking. Avoid overcrowding, use a dish that fits comfortably in your basket. Store leftovers in the fridge for up to 3 days. Reheat at 350°F (175°C) for 4–5 minutes. You can swap flour tortillas for corn tortillas or add beans, peppers, or onions for extra filling.
