Ingredients
  

  • 1 ½ pounds boneless skinless chicken breast cut into bite-sized pieces
  • 2 eggs beaten
  • 1 cup cornstarch
  • Oil spray
  • ¾ cup roasted cashews
  • For the sauce:
  • ¼ cup soy sauce
  • 2 tablespoons hoisin sauce
  • 2 tablespoons brown sugar

Instructions
 

  • Preheat the air fryer to 380°F (193°C) for 3 minutes.
  • Dip chicken pieces into beaten eggs.
  • Coat each piece evenly in cornstarch.
  • Lightly spray coated chicken with oil.
  • Place chicken in a single layer in the air fryer basket.
  • Cook at 380°F (193°C) for 8 minutes.
  • Flip each piece using tongs.
  • Cook for another 4–6 minutes until golden and crispy.
  • Ensure internal temperature reaches 165°F (74°C).
  • In a saucepan, combine soy sauce, hoisin sauce, brown sugar, vinegar, garlic, and ginger.
  • Heat over medium until slightly bubbling.
  • Add cornstarch slurry and stir until sauce thickens.
  • Toss crispy chicken lightly in the sauce.
  • Add roasted cashews and mix gently before serving.

Notes

Air fryer models vary, so check at the 10-minute mark to avoid overcooking. Avoid overcrowding, cook in batches for best crispiness. Add sauce just before serving to keep the coating crisp. Store leftovers in the fridge for up to 3 days. Reheat at 350°F (175°C) for 4–5 minutes. You can add bell peppers or broccoli for extra texture and nutrition.
