Air fryer cashew chicken became my go-to after too many takeout versions that were overly greasy and lacked that fresh crunch. My first attempt turned out crispy, but the sauce made everything soggy too fast. After testing this three ways, I discovered that keeping the chicken extra crisp and adding the sauce right at the end made all the difference. Then I cracked the code with a balanced savory sauce and toasted cashews, and now it comes out perfectly crispy, nutty, and satisfying every time.

Notes
Air fryer models vary, so check at the 10-minute mark to avoid overcooking. Avoid overcrowding, cook in batches for best crispiness. Add sauce just before serving to keep the coating crisp. Store leftovers in the fridge for up to 3 days. Reheat at 350°F (175°C) for 4–5 minutes. You can add bell peppers or broccoli for extra texture and nutrition.
