Ingredients
  

  • 6 egg roll wrappers
  • 4 large eggs
  • ¼ cup milk
  • ½ cup shredded cheddar cheese
  • 4 strips cooked bacon crumbled (or sausage)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • Cooking spray

Instructions
 

  • Heat a skillet over medium heat.
  • Whisk eggs and milk in a bowl.
  • Pour the egg mixture into the skillet.
  • Scramble the eggs until just set.
  • Remove the eggs from heat.
  • Stir in cheese and cooked bacon.
  • Lay one egg roll wrapper on a flat surface.
  • Place 2–3 tablespoons of filling in the center.
  • Fold the bottom corner over the filling.
  • Fold in the sides tightly.
  • Roll up into a sealed egg roll shape.
  • Repeat with remaining wrappers and filling.
  • Preheat the air fryer to 390°F (199°C).
  • Lightly spray each egg roll with cooking spray.
  • Place egg rolls in the basket in a single layer.
  • Cook at 390°F (199°C) for 10–12 minutes.
  • Turn halfway through cooking.
  • Look for golden brown, crispy wrappers.
  • Remove and let cool for 2–3 minutes before serving.

Notes

  • Do not overfill egg rolls to prevent splitting during cooking.
  • Air fryer models vary; check for crispness around 9–10 minutes.
  • Store leftovers in the refrigerator for up to 3 days.
  • Reheat at 350°F (175°C) for 3–4 minutes to re-crisp.
