Ingredients
  

  • 1 large ripe avocado
  • 2 large eggs
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon shredded cheese optional
  • 1 tablespoon chopped chives or parsley optional
  • Red pepper flakes optional

Instructions
 

  • Preheat the air fryer to 350°F (175°C) for 3 minutes.
  • Slice the avocado in half and remove the pit.
  • Scoop out about 1 tablespoon of avocado from each center to enlarge the cavity.
  • Place the avocado halves in a small air fryer-safe dish or ramekin.
  • Crack each egg into a small bowl.
  • Gently pour one egg into each avocado half.
  • Season with salt and black pepper.
  • Sprinkle cheese on top if using.
  • Carefully place the dish into the air fryer basket.
  • Cook at 350°F (175°C) for 8–10 minutes.
  • Check that the egg whites are set and the yolk remains slightly soft.
  • Remove the avocado cups carefully using tongs.
  • Garnish with herbs or red pepper flakes before serving.

Notes

  • Use large avocados so the eggs fit properly without overflowing.
  • If the avocado halves wobble, place them in ramekins or foil rings to stabilize.
  • Air fryer temperatures vary, so check eggs around the 7-minute mark.
  • Store leftovers in the refrigerator for up to 1 day.
  • Reheat in the air fryer at 320°F (160°C) for 2–3 minutes.
