Ingredients
  

  • 2 cups apples peeled and diced (Granny Smith or Honeycrisp)
  • 2 tbsp brown sugar
  • 1 tbsp granulated sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp lemon juice
  • 1 tsp cornstarch
  • 1 tbsp water
  • 8 egg roll wrappers
  • 1 egg for sealing
  • Cooking spray or light oil
  • Powdered sugar optional for serving

Instructions
 

  • Heat a skillet over medium heat.
  • Add diced apples, brown sugar, granulated sugar, cinnamon, nutmeg, and lemon juice.
  • Cook for 5–6 minutes until apples soften.
  • Mix cornstarch with water and add to skillet.
  • Stir until filling thickens and becomes glossy.
  • Remove from heat and let cool slightly.
  • Lay an egg roll wrapper with a corner facing you.
  • Spoon 2–3 tablespoons of apple filling near the bottom corner.
  • Fold bottom corner over filling.
  • Fold in sides tightly.
  • Roll upward and seal with beaten egg.
  • Preheat air fryer to 375°F (190°C).
  • Lightly spray egg rolls with oil.
  • Place in a single layer in air fryer basket.
  • Cook for 6 minutes until lightly golden.
  • Flip egg rolls carefully.
  • Cook for another 5–6 minutes until crispy and golden brown.

Notes

  • Air fryer models vary, so check early to avoid over-browning.
  • Let filling cool before wrapping to prevent soggy wrappers.
  • Do not overcrowd; cook in batches if needed.
  • Store in the refrigerator for up to 3 days.
  • Reheat at 350°F (177°C) for 3–4 minutes until crisp again.
  • Add caramel drizzle or cream cheese dip for extra indulgence.
