Ingredients
- 2 cups apples peeled and diced (Granny Smith or Honeycrisp)
- 2 tbsp brown sugar
- 1 tbsp granulated sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tsp lemon juice
- 1 tsp cornstarch
- 1 tbsp water
- 8 egg roll wrappers
- 1 egg for sealing
- Cooking spray or light oil
- Powdered sugar optional for serving
Instructions
- Heat a skillet over medium heat.
- Add diced apples, brown sugar, granulated sugar, cinnamon, nutmeg, and lemon juice.
- Cook for 5–6 minutes until apples soften.
- Mix cornstarch with water and add to skillet.
- Stir until filling thickens and becomes glossy.
- Remove from heat and let cool slightly.
- Lay an egg roll wrapper with a corner facing you.
- Spoon 2–3 tablespoons of apple filling near the bottom corner.
- Fold bottom corner over filling.
- Fold in sides tightly.
- Roll upward and seal with beaten egg.
- Preheat air fryer to 375°F (190°C).
- Lightly spray egg rolls with oil.
- Place in a single layer in air fryer basket.
- Cook for 6 minutes until lightly golden.
- Flip egg rolls carefully.
- Cook for another 5–6 minutes until crispy and golden brown.
